What should I use to clean up any excess Apoxie from my piece? Should the excess be removed before set and dry?

Apoxie® Sculpt should be cleaned up before it cures otherwise it will need to be sanded or filed from unwanted areas.
Have a beading awl, pair of tweezers or toothpick on hand while working with Apoxie Sculpt so you can carefully remove excess from tight spaces as well as for clean crisp edges.
A softer tipped tool, like the end of a fine paintbrush would also be helpful for areas where there is more room to work and so you don't accidentally gouge the Apoxie Sculpt.
